Mil Hojas Cake
Chilean layer cake made of thin pastry sheets and dulce de leche (manjar).

Ingredients
- 300 g flour
- 150 g cold butter
- 2 egg yolks
- 80 ml cold water
- A pinch of salt
- 1 tablespoon pisco or vinegar
- 800 g dulce de leche
- 200 g ground walnuts for decoration
Step-by-step

- Put the flour, butter, egg yolks, cold water, salt and pisco in the mixing bowl and mix 20 sec/speed 6.
- Knead 2 min/closed lid/dough mode until smooth.
- Divide the dough into 8 equal balls, wrap them and refrigerate 30 min.
- Roll out each ball very thin on parchment paper, prick with a fork and bake each disc 8 min/200°C until golden.
- Let all the pastry layers cool completely.
- Assemble the cake alternating a pastry layer with a generous layer of dulce de leche.
- Cover the sides with dulce de leche and press the ground walnuts around it.
- Refrigerate at least 4 hours to soften before cutting.
Tips
- The thinner the pastry, the softer the cake turns out.
- Save one broken pastry layer to crumble on top.
