Tutu de Feijão (Bean Mash)
Creamy bean mash thickened with cassava flour, from Minas Gerais.

Ingredients
- 400 g cooked black beans with their broth
- 150 g cassava flour
- 100 g bacon, diced
- 1 onion
- 3 garlic cloves
- 30 ml oil
- Scallion and salt to taste
Step-by-step

- Blend the beans with their broth 30 sec/speed 6 into a cream. Set aside.
- Without washing, sauté the bacon 5 min/120°C/speed 1. Set half aside for garnish.
- Add the chopped onion and garlic (5 sec/speed 5) and the oil. Sauté 4 min/120°C/speed 1.
- Pour in the bean cream and heat 5 min/100°C/reverse/spoon speed.
- Add the cassava flour in a steady stream and mix 5 min/100°C/reverse/spoon speed until thickened.
- Serve with the reserved bacon and scallion.
Tips
- Serve with white rice, kale and a fried egg.
- For a vegetarian version, skip the bacon and use olive oil.
