Ingredients
- 400 g flour
- 10 g dry yeast
- 250 ml warm water
- 2 tablespoons sugar
- 1 teaspoon anise seed
- 1 teaspoon salt
- Oil for frying
- Chancaca syrup or honey to serve
Step-by-step

- Dissolve the yeast with the sugar in the warm water and let it foam.
- Put the flour, salt and anise in the mixing bowl, add the yeast: knead 4 min/closed lid/dough mode.
- Let the dough rise, covered, 45 minutes until doubled in volume.
- With wet hands, shape thin discs with a hole in the center.
- Fry in plenty of hot oil until golden and puffed.
- Serve hot, drizzled with chancaca syrup, alongside api.
Tips
- The dough should be soft and well risen so they puff up when fried.
- They're traditionally eaten alongside a cup of hot api.
