Homemade Dulce de Leche

Ingredients

  • 1 liter of whole milk
  • 300 g of sugar
  • 1 teaspoon of vanilla extract
  • 1 pinch of baking soda
  • 1 pinch of salt

Step-by-step

Choose your robot:
  1. Place the milk, the sugar, the vanilla, the salt and the baking soda in the mixing bowl.
  2. Mix 30 sec/speed 3 to dissolve the sugar.
  3. Place the basket on the lid instead of the measuring cup so it evaporates.
  4. Set the dulce de leche 35 min/100 degC/speed 2.
  5. Continue cooking 25 min/Varoma/speed 2 until it takes on a caramel color and thickens.
  6. Check the point: it should coat the spoon and darken evenly.
  7. Pour into a sterilized jar and let it cool; it will thicken more as it cools.
  8. Keep in the refrigerator for up to three weeks.

Tips

  • The baking soda helps with the color and creaminess.
  • Do not overcook it or it will crystallize and become very hard.
  • Stir if you see it sticking to the bottom during the last stretch.
