Leche Asada

Creamy baked dessert of milk, eggs and vanilla with caramel, a cousin of flan.

Ingredients

  • 1 liter of milk
  • 6 eggs
  • 200 g of sugar for the mixture
  • 1 tsp of vanilla extract
  • Zest of 1 lemon
  • 150 g of sugar for the caramel
  • 3 tbsp of water for the caramel

Step-by-step

Choose your robot:
  1. Prepare the caramel in a baking mold: over direct heat melt the sugar with the water until golden and cover the base. Set aside.
  2. Put in the mixing bowl the milk, the eggs, the sugar, the vanilla and the lemon zest.
  3. Mix 30 sec/speed 5 until everything is integrated without forming much foam.
  4. Pour the mixture over the caramel in the mold.
  5. Bake in a water bath at 180°C for 45 min until it sets and the surface is golden.
  6. Check with a toothpick: it should come out clean. Let it cool.
  7. Refrigerate at least 3 hours and unmold onto a plate so the caramel falls.

Tips

  • The water bath prevents the leche asada from curdling.
  • The golden top layer is characteristic of this dessert.
  • Serve it very cold for a better texture.
