Leche Asada
Creamy baked dessert of milk, eggs and vanilla with caramel, a cousin of flan.

Ingredients
- 1 liter of milk
- 6 eggs
- 200 g of sugar for the mixture
- 1 tsp of vanilla extract
- Zest of 1 lemon
- 150 g of sugar for the caramel
- 3 tbsp of water for the caramel
Step-by-step
Choose your robot:
- Prepare the caramel in a baking mold: over direct heat melt the sugar with the water until golden and cover the base. Set aside.
- Put in the mixing bowl the milk, the eggs, the sugar, the vanilla and the lemon zest.
- Mix 30 sec/speed 5 until everything is integrated without forming much foam.
- Pour the mixture over the caramel in the mold.
- Bake in a water bath at 180°C for 45 min until it sets and the surface is golden.
- Check with a toothpick: it should come out clean. Let it cool.
- Refrigerate at least 3 hours and unmold onto a plate so the caramel falls.
Tips
- The water bath prevents the leche asada from curdling.
- The golden top layer is characteristic of this dessert.
- Serve it very cold for a better texture.
