Beans with Noodles (Porotos con Riendas)
Stewed beans with pasta, pumpkin and Chilean sausage.
Ingredients
- 400 g beans, soaked overnight
- 150 g spaghetti
- 1 cup diced squash
- 1 onion, diced
- 2 garlic cloves
- 1 longaniza sausage, sliced
- 1 tablespoon paprika
- 1 teaspoon oregano
- 3 tablespoons oil
- 1.5 liters broth or hot water
- Salt and pepper
Step-by-step

- Cook the soaked beans in a separate pot with water until tender (about 40 min) and set aside with their cooking water.
- Put the garlic and onion in the mixing bowl, chop 4 sec/speed 5 and sauté with the oil 7 min/120°C/spoon speed.
- Add the longaniza, paprika and oregano and sauté 4 min/Varoma/reverse/spoon speed.
- Add the beans with their water, the squash, broth, salt and pepper and set 15 min/100°C/reverse/spoon speed.
- Add the spaghetti broken into pieces and set 10 min/100°C/reverse/spoon speed until al dente.
- Mash part of the squash with the spatula to thicken, adjust the salt and serve.
Tips
- The 'riendas' (reins) are the broken spaghetti — added whole but short.
- Vegetarian version: skip the longaniza and add more squash plus a smoky paprika sauté.
