Ingredients
- 800 g goat kid, in pieces
- 1 bunch cilantro
- 1 onion
- 4 garlic cloves
- 2 tablespoons ají amarillo paste
- 200 g chicha de jora
- 100 g loche squash or pumpkin
- 30 g oil
- 300 g broth
- Salt, pepper and cumin

- Put the cilantro in the mixing bowl with 100 g water and blend 20 sec/speed 8. Set aside the green paste.
- Put the onion and garlic in the mixing bowl, chop 4 sec/speed 5 and scrape down with the spatula.
- Add the oil and ají amarillo. Sauté 6 min/120°C/speed 1.
- Add the goat, chicha de jora, cumin, salt and pepper. Cook 10 min/100°C/reverse/spoon speed.
- Add the broth, cilantro paste and grated loche squash. Cook 60 min/90°C/reverse/spoon speed until the goat is tender.
- Adjust the salt. Serve with beans and white rice.
Tips
- Marinate the goat in chicha de jora the night before for more flavor.
- Loche squash gives the characteristic aroma of northern Peru.
