Colombian lentil soup

Ingredients

  • 350 g soaked lentils
  • 1 carrot, in pieces
  • 300 g potato, cubed
  • 1 ripe plantain, cubed (optional)
  • 1 spring onion
  • 2 ripe tomatoes
  • 3 garlic cloves
  • 1500 g water or broth
  • 1 teaspoon cumin
  • 30 g oil
  • Salt and pepper to taste
  • Chopped cilantro to taste

Step-by-step

Choose your robot:
  1. Put the onion, garlic and tomatoes in the mixing bowl and chop 5 sec/speed 5.
  2. Add the oil and saute the hogao 8 min/Varoma/spoon speed.
  3. Add the carrot and chop 4 sec/speed 4.
  4. Add the drained lentils, the cumin and the water and set 25 min/100C/reverse/spoon speed.
  5. Add the potato and the ripe plantain and cook 15 min/100C/reverse/spoon speed until everything is tender.
  6. Adjust the salt, add the cilantro and mix 30 sec/reverse/spoon speed.
  7. Serve with white rice and a drizzle of olive oil.

Tips

  • Soaking the lentils speeds up the cooking and improves digestion.
  • The ripe plantain adds a pleasant sweetness.
  • For a more protein-rich version, add little pieces of chorizo.
