Ingredients

  • 300 g wheat flour
  • 60 g lard or butter
  • 180 ml warm water
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 250 g refried red beans
  • 150 g Central American sour cream
  • 150 g grated dry cheese
  • Butter for spreading

Step-by-step

Choose your robot:
  1. Place the flour, salt, baking powder and lard in the mixing bowl and mix 20 sec/speed 4.
  2. Add the warm water and knead 2 min/closed mixing bowl/dough mode until a smooth dough.
  3. Let the dough rest covered for 20 minutes and divide into 8 balls.
  4. Roll out each ball with a rolling pin into thin discs and cook on a hot griddle 1 min per side.
  5. For the beans, put them in the mixing bowl with a little oil and heat 4 min/90C/spoon speed until creamy.
  6. Spread each tortilla with beans, add cream and grated cheese.
  7. Fold the tortilla in half and serve immediately, nice and hot.

Tips

  • The dough must rest so it is easy to roll out thin.
  • You can add scrambled egg or avocado for a complete baleada.
  • Serve the tortillas freshly made so they stay flexible.
