Ingredients

  • 500 g milk
  • 300 g water
  • 2 eggs
  • 1 spring onion, finely chopped
  • 1 bunch cilantro, chopped
  • Salt to taste
  • 2 slices of stale or dried bread
  • Pinch of pepper

Step-by-step

Choose your robot:
  1. Pour the water, milk and salt into the mixing bowl and set 8 min/90C/speed 1.
  2. Add the chopped spring onion and set 3 min/90C/speed 1.
  3. When the broth is hot, carefully crack the eggs into the mixing bowl through the lid opening.
  4. Set 3 min/90C/reverse/spoon speed so the egg poaches whole.
  5. Place the dried bread in the soup bowls and pour the broth with one egg into each.
  6. Sprinkle fresh chopped cilantro and pepper to taste.
  7. Serve immediately, very hot.

Tips

  • The egg should stay tender, not too set.
  • The stale or dried bread soaks up the broth and adds texture.
