Ingredients
- 500 g milk
- 300 g water
- 2 eggs
- 1 spring onion, finely chopped
- 1 bunch cilantro, chopped
- Salt to taste
- 2 slices of stale or dried bread
- Pinch of pepper
Step-by-step
Choose your robot:
- Pour the water, milk and salt into the mixing bowl and set 8 min/90C/speed 1.
- Add the chopped spring onion and set 3 min/90C/speed 1.
- When the broth is hot, carefully crack the eggs into the mixing bowl through the lid opening.
- Set 3 min/90C/reverse/spoon speed so the egg poaches whole.
- Place the dried bread in the soup bowls and pour the broth with one egg into each.
- Sprinkle fresh chopped cilantro and pepper to taste.
- Serve immediately, very hot.
Tips
- The egg should stay tender, not too set.
- The stale or dried bread soaks up the broth and adds texture.
